How to cook buckwheat for a vegetable bowl

Trigo Sarraceno Ecológico en Grano Pamir Gold – 250 g

A vegetable bowl is more enjoyable when its base has a pleasing texture. Buckwheat groats offer a way to vary your meals beyond rice or pasta. Careful cooking and a short rest help the grains combine with vegetables and dressings without becoming mushy.

Check what is in the pack

Despite its name, buckwheat is a pseudocereal distinct from ordinary wheat. Do not assume every pack suits every diet: if you need to avoid gluten, check the specific product's label, possible cross-contact information and relevant certification.

This recipe uses whole groats. Buckwheat flour has different uses and cannot be cooked by the same method. Roasted and unroasted groats may also cook differently, so check which you have before deciding on a time.

A starting point for cooking

For two servings, try 120 g groats and about 240–300 ml water. Rinse the groats in a fine sieve and drain. Place in a saucepan with the water and a little salt if desired. Bring to the boil, reduce the heat and simmer gently for roughly 12–15 minutes, checking the texture. Follow the pack instructions if different.

Water and timings are suggestions. If the grain is tender with liquid remaining, drain it. If it is still firm and dry, add a little hot water. Rest covered for about five minutes, then separate with a fork. Avoid constant stirring if you want whole grains.

A vegetable bowl for two

Alongside the cooked groats: one small courgette, one carrot, a handful of leafy greens, one tablespoon olive oil, lemon juice and pepper.

  1. Cut the courgette and carrot into small pieces.
  2. Sauté in the oil until cooked to your liking.
  3. Divide the buckwheat, vegetables and greens between two bowls.
  4. Dress with lemon and pepper, tasting before adding more salt.

For a creamy finish, add a little tahini and nutritional yeast sauce. Tahini contains sesame; choose accompaniments according to your preferences and needs.

Make use of a 250 g pack

Pamir Gold organic buckwheat comes in a 250 g pouch, allowing you to make this base and save dry groats for another day. Keep the pouch sealed in a cool, dry place. Cool cooked leftovers promptly and refrigerate; do not leave them at room temperature for hours.
