The umami side of cooking
Get to know your ingredient

From pack to plate
Getting started is easy.
01
Sprinkle
Start with a teaspoon over your finished dish and adjust to taste. It works especially well on pasta, roasted vegetables and popcorn.
02
Blend into a sauce
Mix the flakes with liquid, then stir or blend. Add gradually to control flavour and texture.
03
Adjust at the end
Taste before salting or adding other strong ingredients. In pesto or a creamy sauce, combine with lemon and oil to round out the flavour.
Try these at home
Three ideas to get you started.
Suggested cooking quantities. Adjust flavour and timings to your ingredients and equipment.

Pasta with creamy courgette sauce
You will need
160 g dried pasta, 1 courgette, 1 tablespoon olive oil, 2 tablespoons nutritional yeast, pepper and pasta cooking water.
Method
Cook the pasta according to the pack and reserve some cooking water. Sauté the diced courgette in oil until soft. Blend with the yeast and a little cooking water. Mix with the pasta, adjust the texture and finish with pepper.

Basil and walnut pesto
You will need
30 g basil, 30 g walnuts, 2 tablespoons nutritional yeast, 3 tablespoons olive oil, lemon to taste and a little water.
Method
Briefly blend all the ingredients. Add water for a lighter sauce. Try it with pasta, boiled potatoes or a vegetable sandwich. Contains nuts.

Popcorn with an umami finish
You will need
50 g popcorn kernels, 1 tablespoon oil and 1–2 tablespoons nutritional yeast.
Method
Pop the kernels with the oil in a covered pan, carefully shaking it. Remove from the heat when popping stops. Add the yeast while the popcorn is hot and mix well. Add salt only if needed.

Look after your pantry
Good storage matters too.
Close the pack tightly and store in a cool, dry place away from moisture. Use dry utensils and follow the label.
Always check the ingredients, allergens, batch number, best-before date and pack instructions. Recipes may contain allergens from other ingredients.
Before you begin
Your questions, answered.
Is it the same as baker's yeast?
No. It is inactive and will not make bread or cake rise. To ferment dough, use the yeast specified in that recipe.
Can I use it in hot food?
Yes, as a culinary ingredient in sauces, mash and gratins. Adjust the flavour gradually and check the label if you are looking for a specific vitamin content.
Can it be eaten directly?
It can be sprinkled over a finished dish; it does not need to ferment. The amount depends on taste and product instructions.
Does it replace cheese in every recipe?
It adds an umami note but does not melt or stretch like cheese. It works best as a seasoning or in a sauce.
