B12 nutritional yeast is a convenient way to give plant-based dishes a savoury finish. Its flakes have toasted, cheese-like notes and can also become part of a sauce. This tahini version needs no cooking and can be adjusted to suit your dish.
Nutritional yeast is not baker's yeast
Nutritional yeast is inactive and used as an ingredient or seasoning. It will not replace baker's yeast to make dough rise. For a recipe that requires fermentation, use the specific yeast the recipe calls for.
The B12 designation does not mean every product has the same composition. Read the label and nutrition information for the exact content and amount per serving. This recipe is about flavour, not a supplementation plan.
Tahini and nutritional yeast sauce for two
Ingredients: one tablespoon tahini, two tablespoons nutritional yeast, one teaspoon lemon juice, four to six tablespoons warm water, pepper and salt to taste. Tahini contains sesame.
- Mix the tahini, yeast and lemon in a bowl.
- Add water gradually, stirring with a spoon or small whisk. The mixture may thicken at first: keep mixing and add a little more water.
- Once creamy, add pepper and taste before adding salt.
- Serve over roasted vegetables, boiled potatoes or freshly cooked pasta.
Measurements are suggestions. Texture depends on the tahini and spoon size. Add water for a thinner sauce; for more body, add some yeast and let it stand for a minute before adjusting again.
Three easy variations
- For pasta: loosen with a spoonful of cooking water and mix off the heat.
- For vegetables: add chopped parsley and a little lemon zest.
- For a grain bowl: keep it more fluid so it spreads easily.
Avoid adding too many strong flavours at once. Taste the base and change one thing at a time to discover the balance you prefer.
